Some consider this our most boldly seasoned salame. It s not spicy/hot, however it is intense with the flavors of Tuscany. Inspired by the cuisine and traditions of Tuscany, we took the bold quality of Tuscan cuisine into consideration when creating the recipe for this iconic salame. There is a reason it has been judged the best salame in America a few times. We use black pepper, chianti wine, garlic, fennel seed and fennel pollen. It is also boldly seasoned to evoke the always desired response of the salty/sweet phenomena. In this case we engage the sense of smell, through the addition of the sweet aromatics brought by using fennel pollen. At first chew, the fennel pollen leaps off your palate and up into your olfactory passages to perfume your senses. You will not get this with your typical finocchiona. Some may think it is too aggressively seasoned, though if it was under seasoned, it would not seem very Tuscan!
